I went home Sunday on the unfortunate grounds of a toothache, but it at least meant I got to spend a Sunday evening with my family. Complete with the Season Premiere of the Amazing Race – best reality tv show around, if you’ve never seen it then you are missing out.
For dinner we had spaghetti squash with a homemade marinara sauce and chicken. FPU (Father Parental Unit) gave me instructions on how he wanted the squash seasoned and glad I did because it resulted in a delicious dish. This is a super easy and highly recommended dish.My dad is just glad that he is having a debut on my blog. It’s a win-win situation.
Preheat oven to 375.
Put foil on baking sheet and lightly coat with cooking spray (this will help with the clean up). Cut the spaghetti squash lengthwise and with a spoon scrap out the middle filling with the seeds (just like you would with a pumpkin)
Season with turmeric, pepper and cinnamon (light sprinkles) We were unsure of how the cinnamon would turn out so only did this on one half, it was delicious though and next time we are going to put cinnamon on both halves
Place the squash face down on the baking sheet and bake for 35 minutes or until the edges of the squash start to caramelize.
Using a fork scrap out the spaghetti squash – it should resemble noodles – hence the name spaghetti. We then used a spoon to scoop it into a bowl.
