To Fall Pumpkin Granola

Pumpkin lovers this is the recipe for you. It is comprised of all greatness that is granola, but with a heavy dose (but don’t interpret this to mean an overload) of pumpkin and other great fall flavors. Served with almond milk and some fruit – and well that is a great start to a day, a great mid-day snack, or hey you know a great finish to the day and totally taking on the dessert role in life.

And just to note, this stuff is refined sugar free, provides a good dose of seed and nut protein and is vegan (:
Insatiably|Pumpkin Granola

Recipe:

Ingredients:
3 cups oats
1/2 cup pecans, chopped
3/4 cup pepitas
1/4 cup flax seeds
1/4 cup coconut oil, melted
1/3 cup maple syrup
1 tbs pumpkin pie spice
2 tsp cinnamon
1/4 cup pumpkin puree

Directions:
Preheat oven to 325F
Line a baking sheet with parchment paper and set aside.
In a large bowl mix together your dry ingredients: oats, pecans, flax, pepitas and spices.
In another bowl, combine your wet ingredients: maple syrup, coconut oil & pumpkin puree. Whisk until mixed well
Combine the wet and dry ingredients and stir until there is an even coating on the mixture
Spread out evenly on your parchment lined baking sheet.
Bake for 20-30 minutes, in 10 minute stirring intervals to prevent burning and promote even browning.
Let completely cool, before storing in an airtight container
