But this carrot salad is super easy and quick so it makes getting your daily veggie count in a little easier.
You can eat your cake, but be sure to eat your carrots too
Recipe (Slightly adapted from Fashion Flavors)
Ingredients:
6 fresh carrots
1/2 lemon (juice)
1 Tbsp. sugar
1 Tbsp of flax seed (whole, not ground)
1 Tbsp olive oil
Directions:
Peel, wash and grate the carrots
Drizzle with lemon juice and olive oil and mix
Sprinkle with sugar and flax seed and stir again
Taste and adjust seasoning to your liking
Let stand at least one hour before serving (to let them lemon juice marinate the carrots)
