To Valentine’s Snicker Doodles

Valentine's Snicker Doodles (2)With Valentine’s around the corner, I thought it would be appropriate to share a different type of  love story with all of you today. A love for university. You see last night something absolutely unbelievable happened. My university – Illinois beat #1 ranked Indiana in college basketball! Oh yes – it has been dubbed the last second miracle and I can’t get enough of watching the highlights reel. Now where these cookies come in is that last night while watching the first half of the game I was making these cookies. Since it’s almost Valentine’s I made them red, but funny little thing is Indiana’s school color is red…I wasn’t baking for Indiana – I bleed orange and blue. Well, my friend said I need to make these orange, so I will be taking him up on that challenge and making not only orange but blue as well for a little I-L-L-I-N-I fanfare baking action! So there will be a lot of snicker doodle eating in these neck of the woods and well that is not a bad thing because these guys are out of the stadium, rush the court, celebrate all night long delicious.

Valentine's Snicker Doodles

Recipe: Yields 20 Cookies
1/2 cup butter, brought to room temperature
3/4 cups sugar
1 large egg
1 3/8 cups flour
1 teaspoons cream of tartar
1/2 teaspoon baking soda
1/8 teaspoon salt
2 tablespoons red sugar crystal sprinkles (or plain sugar)
1 1/2 teaspoons cinnamon

Preheat oven to 350°F.
Mix butter, 3/4 cup sugar and egg thoroughly in a large bowl.
Combine flour, cream of tartar, baking soda and salt in a separate bowl.
Blend dry ingredients into butter mixture.
Chill dough, and chill 2 cookie sheets for about 10-15 minutes in the fridge.
Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.
Coat by gently rolling balls of dough in the sugar mixture.
Place on chilled parchment paper lined cookie sheet, and bake 10 minutes.
Remove from cookie sheet  and cool on wire rack (let them sit for a bout a minute before attempting to move them)
