My love for banana bread is finally starting to materialize and in full force. Now I think I have made a loaf of banana bread each week that I have been back at school (straight up banana bread, marbled banana bread and now this one) and well the loaf barely makes it into day 2 – it is just always that good. We might be a little banana bread crazy over here. I am starting to take requests on how to mix it up. The chocolate chips have been floating in the air for awhile and finally throwing the little ants in there and taking one bite of warm melty chips immediately reminded me of why it is always a crowd pleaser.
What is your preferred way of eating banana bread?
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1/2 cup oil (vegetable)
3/4 cup brown sugar
2 1/3 cups banana, mashed (6 super ripe medium-sized bananas for me)
1 tsp. cinnamon
1 tsp. vanilla
1 cup ants (chocolate chips)
Preheat oven to 350F. Prepare a 9X5 (standard sized) loaf pan by either lining it with baking parchment or spraying with cooking spray/oil.
In a large bowl, mix the following dry ingredients together – flour, baking soda, baking powder, salt, and cinnamon.
In another bowl, mix the oil and brown sugar. Then mix in the eggs, vanilla and finally the banana. (I used a whisk).
Mix the wet into the dry (your large bowl) just until moist but no further. You want to make sure not to over stir/mix. It will mess with the consistency of the bread.
Pour into the prepared 9X5 (standard sized) loaf pan.
Bake on the middle rack in the oven for 50-60 minutes. Be sure to check the bread around 40 minutes. If the top seems to be darkening quicker you can reduce the temperature down to 325F for the remaining baking time. Make sure it bakes all the way through though – you don’t want it to jiggle.
Cool on rack for 10-20 minutes before removing, slicing and enjoying.
