Put all green in and you get all green out – vibrant green in this case.
I had been craving pesto all week so finally made some and I am glad I waited a bit because 5 minutes before making it I thought to use sunflower seeds instead of a nut. Wise decision.
It tasted great tossed on pasta and made for a hearty start to my day. Go get your green fix (:
1/2 cup sunflower seeds
1 small avocado
1/3 – 1/2 cup warm water
1/2 tsp chopped garlic
1 tbsp extra virgin olive oil
1 cup baby spinach (1 large handful)
salt to taste
lime to taste and to help prevent oxidation
Blend all of the ingredients together in a food processor
Use as a pasta or pizza sauce. Smear on crackers or bread. Go wild with ideas!
