To Vegan Pomegranate and Apple Crisp

I got bored reading for course the other day so I decided to make an apple crisp because it had been weighing on my mind for a really.really.really.long time. I just couldn’t ignore it anymore. Joy the Baker came to my rescue…again.

Original recipe was for Vegan Peach Berry Crumbles – sounds fabulous – right? Problem I didn’t have peaches or berries so I just did a bit of substituting – end result was an empty baking dish and happy glutinous friends (:

Ingredients:

For the Fruit:

3 medium sized apples, sliced thin

1 pomegranate de-seeded

1 Tablespoons all-purpose flour

1/2 teaspoon cinnamon

1/8 cup pure maple syrup

For the topping:

1 cup old fashioned oats

1/6 cup all-purpose flour

1/2 teaspoon cinnamon

1/8 teaspoon salt

1 Tablespoons canola oil

2 Tablespoons maple syrup

1/2 teaspoon vanilla

1 Tablespoon water

Preheat oven to 350 degrees F.

In a medium bowl, toss the apples and pomegranate seeds with flour, spices and maple syrup.  Set aside while you assemble the topping.

In a separate medium sized bowl, combine the oats, flour, salt and spices.  In a small bowl whisk together the oil, maple syrup, vanilla extract and water.  Add the wet ingredients to the dry ingredients and blend with a fork.  Make sure all of the dry ingredients are moistened by the oil and maple syrup mixture.

Add a quarter cup of the topping mixture to the fruit mixture and toss together.  Scoop fruit into an 8×8 baking dish.  Spoon the rest of the topping on top. Bake for 35 minutes, or until bubbly and delicious.

Options: Prep at home and take over to a friend’s house to bake so that you can not only deliver them a great dessert but free smells too (:
