Yesterday my dad came home with the consensus that the other cookies I made for his office were a success. This is pretty much code for “hey they want more”.
Here is what came back on the empty container
Since I am only home until Saturday I had to be quick, dad wasn’t going into the office today so that bought me a day, but knew I’d have to come up with something. His secretary loves her peanut butter so thought I’d look for a peanut butter based cookie that had a twist to them – these definitely delivered. I love all of the ingredients and anything with Chunky Monkey in the title is bound to be phenomenal – no questions asked. If you are asking questions then you just must be an inquisitive person.
Super quick to mix up too – so swing on by the store and get the ingredients and then get to baking – you won’t be disappointed (:
1 cup of creamy peanut butter
1 cup of granulated sweetener (1/2 cup brown sugar and 1/2 cup white sugar)
1 tsp baking soda
1tsp baking powder
4 Tbsp Flax meal
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
1/3 cup of peanuts
1/3 cup chocolate chips
1/2 cup chopped banana chips
Preheat oven to 350F. Line a cookie sheet with parchment paper or silicone mat or grease two mini muffin tins (I used the tins to create bite-size treats).
In a medium size bowl, add peanut butter, sweetener, egg, baking soda, baking powder, flax, cinnamon and vanilla and stir to combine until it forms a dough. Fold in peanuts, chocolate chips and chopped banana chips until well incorporated.
Form dough balls – cookie scoopers work wonders – like world wonders… and then place onto lined cookie sheet or into muffin cups (I went with the latter)
Bake for 8-10 minutes until golden brown – place in center of kitchen counter and watch disappear (may have to make something else for dad’s office…)
