My sister found these on Pinterest and really wanted to give them a try. This was a combined effort between the two of us. I made the marinade and boiled the pasta – so the prep work while she actually assembled them. They were easy to make and delicious – can’t beat recipes like that. Perfect for a hot summer day – yet another recipe that lets you avoid turning on the oven.
Ingredients: (recipe from my sister as adapted from numerous sources via Pinterest)
Balsamic Vinaigrette (recipe from Emeril Lagasse)
3/4 cup olive oil
1/4 cup balsamic
1/2 tsp. salt
1/2 tsp. ground pepper
2 cloves crushed garlic
2 tsp. brown sugar
Skewers:
Skewer sticks
Buitoni pasta
Cherry Tomatoes
Kalamata Olives
Green Olives
Mozzarella Cheese
Salami
Pepperoncini
Directions:
Make the balsamic vinaigrette by mixing all of the ingredients together.
Boil the pasta as directed on the package. Rinse under cold water.
Marinate all of the ingredients in the vinaigrette for 2 hours to overnight.
Then assemble it whatever order you like – you can add to or subtract from the ingredient list – don’t feel limited by the ones listed.
We just marinated the pasta and then after assembling the skewers we poured the vinaigrette over – this way they weren’t as oily when assembling. You can choose your own method.
