Now before you wince at the ingredient combo, give it a try. I was a bit hesitant, but we had all the necessary ingredients in the fridge and my sister really wanted to try it so I jumped on board – glad I did because this stuff is great! Best when it is nice and fresh.
Ingredients: (adapted from Peas and Thank You)
2 cups strawberries, finely chopped
1 avocado, finely chopped
4 Tbsp. red onion, finely chopped
4 Tbsp. fresh cilantro, chopped (unfortunately we didnt have this – dad accidentally bought curly parsley, so we used dried flakes – not the best but do-able in a time crunch)
1 Tsp. lime zest
4 Tbsp. fresh lime juice (about 1 big juicy lime)
4 Tsp. jalapeno, seeded and finely chopped
1/2 Tbsp. sugar
Lime Tortilla Chips for Serving
Mix all the ingredients together and dig in with your lime chips
You can make homemade chips too – as is done in the original blog. I’ve done this before and they turn out quite well – but we had these chips on hand so we decided to save ourselves the time and the turning on of the oven.
