To Apple Pecan & Raisin Tuna Salad

Nothing turns me off faster from a recipe than mayo. The way it looks just irks me the wrong way. When I order a burger or sandwich, that white clumpy stuff better come no where near my bread.   Therefore, I refuse to use it in my tuna salad. Some say I’m crazy because I am missing one of the essential ingredients but I say MUSTARD is sooo much better.

This tuna salad will keep you feeling light and energized.

Ingredients:

1 can of tuna, drained (I use white chunk albacore in water)

1/4 cup apple, cubed

1/8 cup raisins

1/8 cup pecans, chopped

1 tbsp. dijonmustard

crushed red pepper flakes to taste

pepper to taste

1 tbsp. hemp seed (optional)

If making a salad:

lettuce (I used half of a romaine heart

honey mustard drizzle (1 pt. honey to 1 pt. mustard – I used 1/2 tbsp)

If making a sandwich:

your bread of choosing

Directions:

Mix all of your ingredients together and top on a bed of lettuce or on your bread of choosing.

Drizzle with the honey mustard or leave plain (your choice), top with the hemp seed (optional) and dig in to a nice big healthy and fun salad!
