Edamame with Shitake

This was the other dish I prepared for my two friends to go along with the Thai Curry Chicken Pineapple Fried Rice.

This one was fun to eat since you had to eat the edamame out of their pods. Made the dinner a little more interactive. It was super quick and easy as well, so recommend it if you need an extra veggie dish.

Ingredients:

1 16oz bag of frozen shelled edamame

2 tbsp. water1/2-1 tbsp. olive oil1 container of shitake mushrooms

2 tbsp. soy sauce

1 tsp. minced garlic (or 1 clove pressed)

Directions:

Put edamame in a microwave safe container with the water and cover. Microwave on high for 8 minutes.

While edamame is cooking, heat the oil in a medium-large size pan. Add the shitake mushrooms and sauté for 5 minutes. Add the soy sauce and garlic and mix. Add the edamame and let heat for a couple more minutes – make sure to mix well so that the edamame take on the shitake, soy sauce and garlic flavors.

Serve warm and enjoy eating with your fingers!
