To Pomegranate Cranberry Spritzers

My second contribution to Thanksgiving was a cocktail. I came across this Spritzer and knew that I had to try it out. We had most of the ingredients in the house, I just had to pick up fresh cranberries and some Spumanti, it seemed like it wouldn’t take long at all so thought, why not give it a go.  I found the recipe on the My Life as a Mrs. Blog or follow the below recipe.

Cin Cin – (Cheers/Toast in Italian)

Ingredients:
Cranberry Pomegranate Syrup
1 ½ Cups Fresh Cranberries
½ Cup Orange Juice (I used the juice from 2 clementines)
½ Cup Pomegranate Juice (I use Lite POM)
½ Cup Water
½ Cup Sugar
Zest of 1 Orange (I used the zest of 1 of the clementines)
Cranberry Pomegranate Spritzers
Chilled Champagne, Prosecco or Sparkling White Wine (I used Spumanti) + Cranberry Pomegranate Syrup
Directions:

Combine ingredients in a sauce pan that has a fitted lid over medium high heat. Bring to a simmer and stir until sugar has dissolved. Cover sauce pan with lid (stir occasionally, making sure it doesn’t boil over). Once the cranberries burst, bring the heat to low and allow to simmer for 10 minutes. Remove from heat and blend with an immersion blender (or allow to cool and carefully blend in a blender or food processor for 30 seconds). Pour syrup through a fine strainer into an air tight container and store in the refrigerator for up to one week

For the Cranberry Pomegranate Spritzers: Fill champagne glasses about 1/4-1/3 full (depending on desired sweetness) with the Cranberry Pomegranate Syrup and top with champagne. Garnish with a few cranberries (Tip: you can use frozen ones to keep your cocktail cold).
